8 boiled eggs; 1 cup cheddar cheese; pepper; 2tbsp milk; 1 large capsicum, diced; 1 large onion, chopped finely; 2tbsp butter; 4tbsp tomato sauce; parsley for garnishing.
1. Boil eggs. Remove yolks and mash with half of the cheese, milk and pepper. Season with salt.
2. Fill egg whites with one tablespoon of mixture; place in baking dish.
3. In a pan heat butter and stir-fry the onion till crisp and tender, for about 2-3 minutes. Add pepper. Stir in tomato sauce. Pour the mixture over the eggs. Sprinkle with remaining cheese. Bake for 15-20 minutes and garnish with parsley. Serve with rice.
